Chia seed pudding is deliciously satisfying way to enjoy a cool treat on a hot summer day. You can add anything you want to it to make it a healthy snack or a more indulgent treat. Both ways taste great - I made the above for breakfast today and it was a perfect amount of cool sweetness I was craving. The seeds also stay fresh in the fridge for a few days, so make extras so you have a healthy snack on hand at all times!

Chia Pudding - 4 servings
1 cup Organic Chia Seeds (I buy mine at Trader Joes)
2 cups almond milk (Califia farms vanilla is my fave, coconut milk works too)
1 TBSP Honey (optional)
2 tsp Cinnamon
Combine all ingredients in a large bowl and let sit in the refrigerator for at least 20 minutes. I prefer making them at night and eating them in the morning. The longer you wait, the more plump the seeds will be.

1/4 Cup Quinoa
2 TBSP Walnuts
1 tsp Cinnamon
1 Smyrna Fig
1 chopped peach
Berries, apples, almonds, cacao nibs/powder and coconut whipped cream are all great additions as well. Have fun and Bon Appetit!
